Spalla Cotta of San Secondo is made from the pig’s front shoulder that is deboned, seasoned and cured for a brief time period. The salume is a soft, flavourful and aromatic meat with not a lot of fat. For an even better tasting experience we recommend serving the Spalla Cotta hot and cut slightly thicker!
