The Black Pork of Parma is a prized breed of pigs present originally in the Parmesan territory, whose meat are of a dark red color and the grease is characterized by an intense flavor.

Black Pig Gola derives from the pig’s jaw, which is then salted and seasoned by the expert hands of our artisans who also give it its characteristic pear shape. Curing period lasts about two months.

The combination of just three ingredients, namely black pork meat, Cervia sea salt and Sarawak pepper produces a savoury, non salty flavour, as well as a strong and spicy aftertaste.

This cold cut is made of lean muscle which forms the characteristic white veins, and fat whose quality is decisively superior to that of pancetta.
