Culatello PDO is made from the finest and softest part of the pig’s leg, which is the muscle tissues in the hind leg. Once the rind and bone are removed, the meat is salted by hand, bagged and left to age for at least 12 months. During this period the winter fog and high summer temperatures allow the product to develop its unique flavour and aromas.
